This recipe is traditionally served with Mexican fried rice. INGREDIENTS 2 cups of cooked nopales (cactus) 9 toasted almonds 2 roma tomatoes 1?4 onion 1 garlic clove vegetable seasoning to taste DIRECTIONS 1. Toast the almonds lightly until they form a deeper brown color. 2. Dice the Roma tomatoes and blend them with the garlic, toasted almonds, cilantro, and red onion. 3. Cook the sauce on medium heat until it has turned red. As it starts to simmer, add the vegetable seasoning to taste. 4. Add the cactus to the sauce and let it simmer on low heat for two to three minutes.
